Rustic Tart launches ready-to-roll pastry

Stephanie Lock is a pastry-dough savant--and we're pleased to report that she's sharing the fruits of her labor.

Her subscription-only Rustic Tart galettes are superb, not least because they're packed with locally grown rhubarb, sour cherries, or other farmers' market finds. The unexpected star of her sweets is the flaky, buttery crust. And this stellar dough is now available to take home in frozen, ready-to-roll disks ($10 each).

It's packed with the highest-quality ingredients, including Plugrá butter, and made with deft, expert hands. The frozen pastry is labeled with detailed instructions for rolling, filling and baking. Don't skip the optional last step of brushing the dough with cream (Lock uses Kilgus Dairy) and sprinkling it with coarse sugar.

Dough scraps should be cherished, not tossed; sprinkle them with cinnamon and sugar and pop them in the oven for a cook's snack.
