For the inaugural dinner of our 2012 Guest Chef Series, we turned to chef Edward Lee, chef-owner of 610 Magnolia in Louisville, KY. He treated guests to an inventive meal filled with ingredients sourced from the Union Square Greenmarket. The Top Chef contestant's Korean heritage and Southern hospitality shone in one of our favorite dishes of the evening: slow-cooked Red Wattle pork shoulder with corn pudding, tamarind, white kimchi and lardo cornbread. The evening ended with tobacco cookies and a bourbon tasting hand-selected by the chef himself.
