at the Japanese Culinary Academy--specifically, umami. He'll teach the 
basics of the savory 'fifth taste' at this cooking demo ($100), including 
variations on dashi (a stock that's the foundation of many Japanese 
dishes), sushi and miso. You, of course, get to taste his creations. 5955
