into curds of the moment, seek out Jonathan White of Bobolink Dairy.

While its supplies last, this Greenmarket fixture is selling chunks of 
Endgame, a deliciously ripe, end-of-season cheese made from raw, grass-fed 
cow's milk.

Unlike the solid cubes of rich cheese that White (pictured) generally has 
on hand, Endgame's rind can barely contain its yellow colored interior, a 
slightly sweet and pungent ooze that White compares to room-temperature 
fondue.

Eat it with a spoon or spread it on Bobolink's wood-oven-baked breads, 
which White sells alongside the cheese at the Union Square Greenmarket on 
Fridays and at Tucker Square (66th St. and Broadway) on Saturdays.

Consider it your just reward for putting up with all that cold.
