Chef Marcus Samuelsson may be known for the soulful food he serves at Harlem's Red Rooster and his killer sense of style—but right now, he's all about cooking at home.

"It's not technique-driven," Samuelsson says of his vibrant new book, Marcus Off Duty ($25). "It's the sort of food I want to cook now—and it really goes back to my grandmother's approach. She cooked nose to tail before that was even a phrase."

Experience it for yourself on November 17, when Samuelsson will cook a three-course dinner in our Test Kitchen & Dining Room in Soho to celebrate the book's release. He'll be making chicken-liver doughnuts, sticky fingers lobster stew with crispy crab fried rice and beef four ways with Swedish potato dumplings—as well as a few sides straight from the book (see the menu).

He'll also be putting together a special playlist to accompany the meal, a nod to the "Songs to Cook By" pages in his cookbook, which pair music with food.

"In Harlem, there is music everywhere," Samuelsson says. "I often set the playlist based on who's coming and what my guests will respond to."
