We have quite a number of granolas here in the TT office at the ready for editors to mix into their morning yogurt. However, none of the editors were ready for this savory granola—until they tried it and loved it. Its salty mix of oats and walnuts is perfumed with dry oregano and coriander for a crunchy snack that's perfect in a savory parfait (see the recipe).

Savory Walnut-Oregano Granola

Ingredients
  • 1 cup rolled oats
  • ½ cup walnuts, roughly chopped
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 teaspoons flaky sea salt
  • 2 teaspoons dried oregano
  • 1 teaspoon white sesame seeds
  • 1 teaspoon poppy seeds
  • 1 teaspoon coriander seeds
  • ½ teaspoon freshly ground black pepper
  • 1 egg white, lightly beaten
Directions
  1. Preheat the oven to 350° and line a baking sheet with parchment paper. In a large bowl, toss all the granola ingredients together to incorporate. Spread out in an even layer on the baking sheet and bake until crisp and golden, 25 to 30 minutes. Let cool completely, then use immediately or store in an airtight container for up to 3 weeks.
