We gave the classic PB&J an upgrade, using almond butter, and sautéing it in hot butter to make a crispy, golden, melty, gooey sandwich.

Ingredients
  • 2 dried apricots, roughly chopped
  • 3 tablespoons apricot jam
  • 1 teaspoon fresh lemon juice
  • 2 slices soft white bread
  • 3 tablespoons smooth natural almond butter
  • 2 teaspoons dark honey (such as buckwheat)
  • Pinch flaky sea salt
  • 1 tablespoon unsalted butter, divided
Directions
  1. In a small bowl, combine the chopped apricots, jam and lemon juice. Spread the mixture onto one slice of bread.
  2. Spread the almond butter onto the second slice of bread, then drizzle with honey and sprinkle with the flaky sea salt. Flip onto the jam slice to sandwich.
  3. In a small sauté pan, melt half of the butter over medium heat. When the butter begins to foam, place the sandwich in the pan and cook until golden brown, 1 to 2 minutes. Flip and add the remaining butter, swirling the pan to coat the bottom slice well. Cook until the second side is golden brown, another 1 to 2 minutes. Serve.
