Ingredients
  • 2 pita rounds, sliced in half crosswise and separated to make 8 single-layer pita halves
  • ½ cup extra-virgin olive oil, divided
  • 2 tablespoons za'atar spice
  • 1 English cucumber, chopped into ½-inch pieces
  • 2 yellow bell peppers, chopped into ½-inch pieces
  • 3 medium tomatoes, chopped into ½-inch pieces
  • 2 bunches green onions, thinly sliced
  • 3 medium lemons, juiced
  • Salt and freshly ground black pepper
Directions
  1. Preheat the oven to 350°. Place the pita slices on a baking sheet and drizzle with ¼ cup olive oil. Sprinkle with the za'atar and bake until golden-brown, about 7 minutes. Set aside to cool, then crumble into small pieces.
  2. In a large bowl, combine the cucumber, peppers, tomatoes and onions. Add the lemon juice and the remaining ¼ cup olive oil. Add the crumbled pita and season with salt and pepper.
