① Appetizer: Shaved Summer Squash with Pine Nuts and Pecorino

You'll definitely want a mandoline to make quick work of this summery salad. Use whatever squash you have on hand, sprinkle on the Pecorino and Thai chiles, and don't forget those beautiful squash blossoms.
