Not feeling inspired by your usual dishes? Here's what's for dinner.

What's going on tonight? Not your oven, that's for sure. If you can't stand the heat, stay in the kitchen, because tonight we're kicking off Salad Month with a vegetable-centric feast that's no cook, no frills—but still delicious.

① Drink: Highland Cup
Jim Meehan proves that juleps are relevant beyond the Kentucky Derby. Though he swaps bourbon for tequila and mint for cilantro in this version, he keeps the crushed ice, which doesn't hurt when it comes to staying chill.

② Appetizer: Melon-Basil Soup with Cucumbers Pimentón
This soup is like fruit salad but with a little kick. It has that cleansing effect (and verdurous appearance) of green juice but leaves you feeling a bit more satiated. A dash of smoked paprika is the only touch of heat that's invited to dinner.

③ Main Course: Summer Rolls with Lime-Cured Shrimp and Peaches
Thinly sliced peaches makes this Vietnamese staple even more summery than its name alone implies. With lime-spritzed shrimp, crisp radishes and a hefty dose of herbs, you might find yourself craving these rolls even when your AC goes into hibernation.
