Ingredients
  • 8 cups water
  • One 1-inch piece ginger, skin scraped away with the edge of a spoon
  • Finely grated zest and juice of 2 Meyer lemons (or 1 lemon and 1 orange)
  • Finely grated zest and juice of ½ medium tangerine
  • 1 cinnamon stick
  • 5 green cardamom pods
  • 4 allspice berries
  • 2 whole cloves
  • Pinch saffron
  • 2 tablespoons honey
Directions
  1. In a large saucepan set over medium-high heat, add the water, ginger, Meyer lemon zest, tangerine zest, cinnamon stick, cardamom pods, allspice, cloves and saffron. Bring the liquid to a boil, then reduce the heat to low, cover the saucepan and simmer for 20 minutes.
  2. Strain the liquid through a fine-mesh sieve set over a medium bowl (discard the solids and spices). Return the liquid to a clean saucepan, add the Meyer lemon and tangerine juices, and set over low heat until the elixir is warmed through, 1 to 2 minutes. Stir in the honey and serve warm.
