Ingredients
  • Pineapple-Papaya Vinegar
  • 1 pineapple, peeled, cored and cut into 2-inch cubes
  • 1 papaya, peeled, seeds removed, and cut into 2-inch cubes
  • ½ cup granulated sugar
  • 2 cups unpasteurized apple cider vinegar (such as Bragg's)
  • Cocktail
  • 2 ounces Herradura Tequila Blanco
  • ¾ ounce agave syrup
  • ¾ ounce fresh lime juice
  • 2 to 3 lemon verbena leaves
  • Ice
  • Pineapple wedge, for garnish
Directions
  1. Make the vinegar: In a large container, add the pineapple and papaya. Sprinkle the sugar over the fruit, then add the apple cider vinegar. Cover the container with cheesecloth and let sit for 2 weeks. Strain the vinegar through fresh cheesecloth, discarding the fruit pulp. Store the vinegar in a lidded container in a cool, dry place.
  2. Make the cocktail: In a cocktail shaker, add the tequila, agave syrup, lime juice, lemon verbena leaves and 1 ounce of the pineapple-papaya vinegar. Fill the shaker with ice and shake well. Strain into an ice-filled Old-Fashioned glass. Garnish with the pineapple wedge and serve.
