Ingredients
1 ½ pound fresh broccoli
1 teaspoon olive oil
1 ½ teaspoon kosher salt, divided
¼ yellow onion
4 ounces cheddar cheese, grated
2 ounces gruyere cheese, grated
5 tablespoons unsalted butter, divided
¼ cup flour
¼ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon madras curry powder
1 cup chicken broth
¾ cup milk
⅔ cup sour cream
3 cups cooked chicken, shredded or cubed
⅓ cup panko bread crumbs
Directions
Preheat the oven to 400 F.
Chop the broccoli into bite-sized pieces.
Coat the broccoli with the oil and ½ teaspoon salt and roast it for 5 minutes in the oven.
Peel and chop the onion and grate the cheeses.
Melt 4 tablespoons butter over medium heat.
Saute the onion with the remaining salt until it starts to brown.
Stir the flour and seasonings into the onions until a thick paste is formed.
Stir the chicken broth into the onions a bit at a time.
Cook the sauce, stirring constantly until it thickens.
Pour in the milk, a little at a time, and stir until the sauce has the consistency of gravy.
Take the sauce off the heat and stir in the sour cream and half the grated cheese until smooth.
Arrange the chicken and broccoli in a 9x13-inch pan and cover them with the sauce.
Sprinkle the casserole with the remaining cheese.
Melt the remaining butter and stir it into the breadcrumbs.
Sprinkle the crumbs over the casserole and bake it for 18-20 minutes, until the top is golden and the cheese is bubbling.
