Ingredients
  • ::For the mint simple syrup::
  • ¼ cup water
  • ¼ cup sugar
  • 6 mint leaves
  • ::For the cocktail::
  • 2 cups crushed ice
  • 1 lime
  • 2 ounces vodka
  • 12 ounces ginger beer
Directions
  1. To make the mint simple syrup, heat the water and sugar together over medium heat in a small sauce pan. Stir until the sugar fully dissolves, reducing heat to a low simmer if it begins to boil. Remove from heat and add the mint leaves. Allow the mint to steep and the syrup to cool for 10 minutes.
  2. Fill 2 Moscow mule copper mugs with crushed ice (about 1 cup each).
  3. Cut the lime in half, then juice half a lime into each mug.
  4. Add 1 teaspoon of the cooled mint simple syrup, 1 ounce of vodka, and 6 ounces of the ginger beer into each mug. Stir.
  5. Garnish with mint sprigs and/or a lime slice as desired.
