- ¼ cup water
- ¼ cup sugar
- 6 mint leaves
- ::For the cocktail::
- 2 cups crushed ice
- 1 lime
- 2 ounces vodka
- 12 ounces ginger beer
- To make the mint simple syrup, heat the water and sugar together over medium heat in a small sauce pan. Stir until the sugar fully dissolves, reducing heat to a low simmer if it begins to boil. Remove from heat and add the mint leaves. Allow the mint to steep and the syrup to cool for 10 minutes.
- Fill 2 Moscow mule copper mugs with crushed ice (about 1 cup each).
- Cut the lime in half, then juice half a lime into each mug.
- Add 1 teaspoon of the cooled mint simple syrup, 1 ounce of vodka, and 6 ounces of the ginger beer into each mug. Stir.
- Garnish with mint sprigs and/or a lime slice as desired.
