Refreshing Mojito Cocktail Recipe
For the mint syrup
½ cup granulated sugar
½ cup water
5 mint leaves
½ ounce mint simple syrup
5 mint leaves, plus sprigs for garnish
1 ½ ounces white rum
1 ounce lime juice (from about 1 lime)
4 ounces club soda
1 lime peel, for garnish
To make the syrup, heat the sugar and water over medium heat until the sugar is completely dissolved, about 2 to 3 minutes.
Add the mint leaves, then remove from heat and steep for 25 to 30 minutes.
Strain the syrup into a sealable jar and store it in the refrigerator.
To build the cocktail, muddle mint leaves and mint simple syrup in a highball glass. Pour in the rum and lime juice and stir to combine.
Add ice, then top with club soda. Garnish with mint sprigs and lime.
