Ingredients
  • 1 13-ounce bag tortilla chips
  • ½ rotisserie chicken, shredded
  • 2 cups cheddar cheese, shredded
  • 1 cup sour cream
  • 1 lime, juiced
  • ½ red onion, minced
  • 1 tomato, diced
  • 8 sprigs cilantro, minced
Directions
  1. Preheat the oven to 350 F.
  2. Line a baking sheet with parchment paper.
  3. Spread the tortilla chips on the baking sheet in an even layer.
  4. Sprinkle the chips with shredded chicken, red onion, and cheddar cheese.
  5. Bake the nachos for 5–7 minutes, until cheese is melted.
  6. In a bowl, mix the sour cream, lime juice, and minced cilantro. Stir to combine.
  7. Top the baked nachos with diced tomato and cilantro sour cream.
  8. Garnish with additional minced cilantro and lime wedges, if desired.
