Classic Broccoli Cheddar Soup Recipe

Ingredients
1 tablespoon olive oil
1 onion, diced
1 carrot, diced
1 large baking potato, finely diced
1 head broccoli, finely diced
3 ½ cups vegetable stock
1 cup whole milk
2 ½ cups grated cheddar cheese
salt, to taste
pepper, to taste
Directions
Heat the olive oil in a large soup pot and fry the onion and carrot on a medium setting for about 10 minutes, stirring frequently.
Add the broccoli, potato, and vegetable stock, bring the pot to a boil, then reduce to a simmer and leave it to cook for 20 minutes.
Stir in the milk and cheese.
Add salt, pepper, or any other seasoning that you may prefer to taste.
Serve the soup warm, with crusty bread.
