Simple Spiced Apple Cake Recipe

Ingredients
  • ½ cup butter, room temperature and cubed
  • ⅔ cup caster or granulated sugar
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup sour cream
  • 2 Bramley apples
  • 1 Granny Smith apple
  • 1 tablespoon mixed spice
  • ⅓ cup brown sugar
Directions
  1. Preheat the oven to 320 F. Grease and line a 9-inch cake pan.
  2. Peel and core the apples, and cut them into wedges.
  3. Put the apple slices in a bowl and add the brown sugar and mixed spice and give it a good stir, coating the slices fully.
  4. Put the butter and sugar into the bowl of a stand mixer and beat until light and fluffy. If you don't have a stand mixer, you can use an electric hand beater.
  5. Add the vanilla and the beaten eggs a little at a time until they're all combined.
  6. Sift in the flour, then add the sour cream.
  7. Keep mixing until all is well-combined.
  8. Spoon the cake mixture into the prepared pan, then place the apple slices on top. You can arrange the slices so they fan out in a circle.
  9. Bake in the oven for one hour, until the cake has risen and the apples are golden and crispy.
  10. Remove the cake from the oven and let it cool for at least half an hour in the pan. Serve large slices with cream or ice cream.
