Begin the recipe by peeling the ginger, then slicing it into ½-inch discs.
Get a saucepan, fill it with 2 cups of water, and turn the heat up to medium-high. Boil the ginger for 1 hour, then drain the water.
Add 2 more cups of water and 2 cups sugar, and boil for 1 hour.
Drain the sugar syrup and place the ginger pieces onto a plate. Pour ½ cup of white granulated sugar onto the plate and begin to coat the ginger in the sugar.
Leave the candied ginger out on a tray for 1 hour.
