Ingredients
1 ¼ cups unsalted butter, melted
1 ¼ cup brown sugar, packed
⅓ cup granulated sugar
2 medium eggs + 1 egg yolk, room temperature
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt
2 cups chocolate chips
Directions
Preheat the oven to 350 F. Prepare a 9- to 10-inch cast iron skillet pan by greasing it with a little butter or oil.
In a stand mixer, mix together the melted butter with the brown sugar and the white sugar.
Add the eggs and the vanilla extract, then mix again until the ingredients are thoroughly combined.
Add the flour, baking soda, baking powder, and salt to the stand mixer and slowly mix together until the ingredients are just combined.
Gently fold the chocolate chips into the cookie dough and then move the dough to the prepared skillet pan, making sure that it is evenly spread out.
Bake the skillet cookie for 40 minutes, until the top is golden brown and the inside is still gooey.
Allow the skillet cookie to cool down for 20 minutes before serving. Serve with a generous helping of vanilla ice cream.
