- 3 pounds frozen peaches
- ½ teaspoon vanilla extract
- ⅔ + ¾ cup brown sugar
- ¾ cup flour
- ½ cup rolled oats
- ⅔ cup pecans
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 stick unsalted butter
- Preheat oven to 350 F. Spray a 9x11-inch baking dish with nonstick cooking spray.
- In a large bowl, add peaches, vanilla extract, and 2/3 cup of brown sugar. Stir well.
- In a medium bowl, add remaining brown sugar, flour, oats, pecans, cinnamon, and salt. Cut the butter into tablespoons, then add each chunk to the mix and stir well.
- In the baking dish, add peach mixture.
- Top peaches with flour mixture, and make sure the butter chunks are evenly distributed.
- Bake for 55 to 60 minutes, then serve with ice cream.
