Ingredients
  • Ice
  • 2 ounces white rum
  • 1 ounce fresh lemon juice
  • :::½ ounce simple syrup (2:1):::
  • 2 sprigs thyme, plus one more for garnish
  • 1½ ounces ginger beer
  • Lemon wedge
Directions
  1. In a cocktail shaker filled with ice, combine the rum, lemon juice, simple syrup and thyme and shake well. Strain into a Collins glass. Top with the ginger beer, garnish with the lemon wedge and thyme sprig and serve.
