Chicken Pasta Salad Recipe

Ingredients
  • 8 ounces fusilli pasta
  • ¼ cup mayonnaise
  • 2 teaspoons + 1 tablespoon olive oil, divided
  • juice of 1 lemon
  • 1 tablespoon honey
  • 1 ½ teaspoons Dijon mustard
  • ½ teaspoon Italian seasoning
  • salt, to taste
  • 8 ounces cooked chicken pieces
  • 12 cherry tomatoes, halved
  • 2 cups chopped lettuce
  • ⅓ of a large cucumber, diced
  • 1 yellow bell pepper, diced
Directions
  1. Boil the pasta in salted water as per the packet instructions. Drain and run under cold water to cool.
  2. Add the pasta to the pan, drizzle with 2 teaspoons of olive oil, and toss to coat.
  3. In a small bowl, mix together the mayonnaise, remaining 1 tablespoon of olive oil, lemon juice, honey, Dijon mustard, Italian seasoning, and some salt to taste.
  4. Add the pasta, chicken, tomatoes, lettuce, cucumber, bell pepper and the sauce mixture to a large mixing bowl. Mix together with a large wooden spoon until fully combined.
  5. Optionally serve the pasta salad with fresh chopped basil.
