Ingredients
  • Maldon or sea salt
  • Cracked black pepper
  • One 3.5-to-4-pound chicken
  • 1 head garlic, split horizontally
  • 1 lemon, split horizontally
  • 3 sprigs fresh thyme
  • ¼ cup extra virgin olive oil
Directions
  1. Position the oven rack to rack position 3. Preheat Wolf electric oven to ROAST at 375°F.
  2. Rub salt and pepper on the inside and outside skin of the chicken. Place the garlic, lemon and thyme inside the chicken cavity. Loosely tie the legs together. Rub oil over the entire chicken. Place the chicken on the roasting rack over a broiler pan. When the oven is preheated, place it in the oven. Insert a temperature probe in the center of the chicken thigh and set for 180°. The chicken will take 50 to 65 minutes to reach the internal temperature. Remove from the oven and allow to stand for 15 minutes. Then serve.
