Mescal Cocktail Recipe with Carrot Shrub | Tasting Table

Ingredients
1 large carrot
¾ cup white sugar
¾ cup apple cider vinegar
2 pieces cardamom
2 ounces mescal
1 ounce carrot shrub
¾ ounce ginger syrup
½ ounce lime juice
4 dashes Bigallet thyme liqueur
Pinch of salt
Sprig of rosemary
Sprig of mint
Ginger beer, to top
Directions
Make the shrub: Combine all all ingredients in a blender and blend on high until liquified. Set aside 2. Combine all ingredients except for the rosemary, mint and ginger beer in a shaker and shake hard. Double strain into a Collins glass with ice and top with ginger beer.
