Lemon Blueberry Pie Recipe

Ingredients
  • 1 (14.1-ounce) package of 2 refrigerated pie crusts
  • ¾ cup granulated sugar, divided
  • 2 pints fresh blueberries
  • 4 tablespoons cornstarch
  • ½ teaspoon salt
  • 1 lemon, zested and juiced
  • 2 tablespoons butter, cut into small cubes
Directions
  1. Preheat oven to 400 F.
  2. Lay 1 pie crust in a lightly greased pie pan.
  3. Sprinkle with 1 teaspoon of granulated sugar.
  4. In a large bowl, combine the blueberries, remaining granulated sugar, cornstarch, salt, lemon juice, and lemon zest.
  5. Transfer the blueberry mixture into the prepared pie crust.
  6. Top the blueberries with the cubes of butter.
  7. On a lightly floured surface, roll out the remaining pie crust.
  8. Cut it into 10 even strips.
  9. Lay them over the filling as follows: evenly-spaced apart, 5 in one direction, 5 in the other.
  10. Press the edges together to seal.
  11. Bake in the preheated oven for 40 to 45 minutes, until the crust is golden brown.
  12. Let cool, then serve.
