Ingredients
  • 2 ripe bananas, sliced into ¼-inch rounds
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar, divided
  • 12 ounces 70% dark chocolate, chopped
  • ⅓ cup creamy peanut butter
  • ¼ cup roasted peanuts, chopped
  • 2 tablespoons unsweetened coconut flakes, toasted
  • 1 teaspoon flaky sea salt
Directions
  1. Preheat the oven to 400 F.
  2. Line 2 baking sheets with parchment paper.
  3. Toss the banana slices gently with the melted butter and 1 ½ tablespoons of brown sugar.
  4. Spread the bananas in a single layer on the prepared baking sheets, without overlapping.
  5. Bake for 10 minutes. Flip each slice and bake until deep golden and caramelized at the edges, 6 to 8 minutes more.
  6. Remove the bananas from the oven and switch the oven to broil.
  7. Sprinkle the bananas with more brown sugar, return to the oven, and broil for 5 minutes.
  8. Let the bananas cool on the sheet for 10 minutes so they release steam before touching the chocolate.
  9. Prep another baking sheet with parchment paper.
  10. Arrange the cooled banana slices in a single, tightly packed layer on the second prepared baking sheet.
  11. Melt the chocolate in a heatproof bowl set over a pot of barely simmering water, stirring occasionally, until smooth.
  12. Pour the melted chocolate evenly over the bananas, using a spatula to fill in any gaps and cover them completely.
  13. Warm the peanut butter in the microwave for 15 seconds, until pourable, then drizzle it over the chocolate. Use a toothpick or skewer to swirl it into the surface.
  14. Sprinkle with the chopped peanuts, toasted coconut flakes, and flaky sea salt. Freeze until completely firm, about 2 hours.
  15. Break into irregular pieces.
  16. Serve banana freezer bark directly from the freezer.
