Grilled Butternut Squash Agrodolce Recipe

Ingredients
  • 1 butternut squash, sliced into ½-inch rings
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup pine nuts
  • 2 tablespoons butter
  • 2 small yellow onions, very thinly sliced (about 1 ½ cups sliced onion)
  • 6 sage leaves, chiffonaded
  • ⅓ cup red wine vinegar
  • 2 tablespoons honey
Directions
  1. Preheat the grill to medium high, or 400 F to 425 F.
  2. Toss squash in a bowl with olive oil, salt, and pepper until completely coated.
  3. Place the squash on the grill over direct heat and grill on both sides until charred and softened, about 5 minutes per side.
  4. In the meantime, heat a skillet over medium heat.
  5. Add pine nuts and toast until just browned, then remove promptly and set aside.
  6. Turn the heat to medium-low and melt the butter in the same skillet.
  7. Add the onions and cook until softened and beginning to brown, about 15 minutes.
  8. Add the sage and cook for another 1 to 2 minutes to soften.
  9. Stir in the red wine vinegar and honey and reduce for 3 to 5 minutes, until glossy and slightly thickened.
  10. To serve, spoon the agrodolce over the squash and top with toasted pine nuts.
