Pumpkin Chocolate Chip Cookies Recipe

Ingredients
  • ½ cup canned pumpkin purée
  • 1 ¾ cups flour
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 12 tablespoons softened butter
  • 1 cup packed light brown sugar
  • 2 egg yolks
  • 2 teaspoons vanilla
  • ¾ cup chocolate chip chunks
Directions
  1. Preheat the oven to 350 F.
  2. Place a cheesecloth or paper towel into a fine mesh sieve and add the pumpkin. Firmly blot the pumpkin with a paper towel to remove excess moisture. Repeat as needed until very dry.
  3. In a medium-sized bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In a large bowl or stand mixer, cream the butter and sugar together until fluffy, about 3-4 minutes.
  5. Add the egg yolks and vanilla and continue beating until smooth.
  6. Add the dried pumpkin and beat until just combined.
  7. Add the flour mixture slowly and mix with a spatula until just combined.
  8. Stir in the chocolate chunks.
  9. Roll the dough into 2-inch balls and place them onto a cookie sheet about 3 inches apart.
  10. Press the balls into flat discs.
  11. Bake for 14-15 minutes, until puffy but matte and set. Cool on the baking sheet for 8-10 minutes.
  12. Remove and let the cookies cool completely on a wire rack before serving.
