Caramelized Onion Focaccia Recipe

Ingredients
  • 1 (0.25-ounce) package active dry yeast
  • 2 teaspoons granulated sugar
  • 4 cups bread flour
  • 2 teaspoons kosher salt
  • 1 tablespoon olive oil
  • 1 yellow onion
  • 2 tablespoons unsalted butter
  • 3 tablespoons olive oil, divided
  • ½ teaspoons kosher salt
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon ground black pepper
  • 1 tablespoon fresh thyme leaves, plus additional for garnishing
Directions
  1. In a large bowl, stir to combine 2 cups warm water, with the yeast and sugar. Cover and set aside for 5-10 minutes until foamy.
  2. Add the flour, 2 teaspoons salt, and 1 tablespoon olive oil.
  3. Stir until the dough is combined but shaggy, then cover and set aside to rise for 30 minutes.
  4. Stretch and fold the dough in the bowl 8-10 times using gloved or wet hands. Repeat the rising and folding process two additional times, waiting half an hour between folds, and folding 8-10 times each time.
  5. In the meantime, use a mandoline or sharp knife to thinly slice the onion.
  6. Heat the butter and 1 tablespoon olive oil in a large saucepan.
  7. Add the onions and ½ teaspoon salt and cook over medium-low heat, stirring occasionally, until golden brown.
  8. Add the Worcestershire sauce and continue to cook for an additional minute. Set aside.
  9. Grease a 9x13-inch baking pan with 1 tablespoon olive oil.
  10. Gently pour the risen dough into the pan, avoiding pressing or kneading. Stretch gently to cover the base of the pan. Cover and set aside.
  11. Preheat the oven to 400 F.
  12. Drizzle the dough with the remaining 1 tablespoon olive oil, and dimple firmly with your fingertips.
  13. Top with grated cheese if using, and thyme.
  14. Portion on the caramelized onions.
  15. Bake for 35-40 minutes until golden brown and baked through.
  16. Garnish with additional thyme and serve warm.
