Apple Cinnamon Cereal Cookies Recipe

Ingredients
  • 2 cups Cinnamon Toast Crunch, divided
  • 1 ½ cups Apple Jacks, divided
  • ½ cup unsalted butter, cubed and softened
  • ½ cup packed dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla paste
  • 1¾ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
Directions
  1. Preheat the oven to 350 F
  2. Line 2 baking sheets with parchment paper.
  3. Seal 1 cup Cinnamon Toast Crunch in a zip-top bag and crush it with a rolling pin into small crumbs. Pour them into a shallow bowl and set aside.
  4. Place the remaining 1 cup Cinnamon Toast Crunch and 1 cup Apple Jacks in a zip-top bag and tap gently with a rolling pin until broken into larger pieces but broken down.
  5. Beat the butter, brown sugar, and granulated sugar in a large bowl on medium speed until creamy and lighter in color, 1 to 2 minutes.
  6. Beat in the egg and vanilla until smooth.
  7. Whisk the flour, cinnamon, baking soda, and salt in a medium bowl.
  8. Add the flour mixture to the butter mixture and mix on low speed just until no dry flour remains.
  9. With your hands, fold in the larger crumb-sized cereal pieces.
  10. Scoop the dough into 3-tablespoon balls.
  11. Roll each ball in the fine Cinnamon Toast Crunch crumbs, pressing gently so they stick and place 8 cookies on each baking sheet about 3 inches apart.
  12. Press 3 or 4 of the remaining whole Apple Jacks into the top of each ball.
  13. Bake until the edges are golden and the centers look puffy and slightly underdone, 11 to 13 minutes.
  14. Transfer to a wire rack to cool for 10 minutes before serving.
