One-Pan Italian Sausage And Cannellini Bean Dinner Recipe

Ingredients
  • 2 pints (about 4 cups) cherry tomatoes
  • 2 (15-ounce) cans cannellini beans, drained
  • ½ cup chicken broth
  • 1 cup sliced fennel bulb
  • 4 peeled and smashed garlic cloves
  • 1 shallot, sliced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes
  • 2 sprigs rosemary
  • 5 links mild Italian sausage
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon finely chopped parsley
Directions
  1. Preheat the oven to 425 F.
  2. Add the tomatoes and beans to a 9x13-inch casserole dish or deeply rimmed sheet pan.
  3. Cover with chicken broth, then add the fennel, garlic, shallot, salt, pepper, pepper flakes, and rosemary and gently stir to combine.
  4. Nestle the sausages into the pan and drizzle them with olive oil.
  5. Roast for 20-25 minutes, then flip the sausages and stir the tomato mixture, pressing into the tomatoes with the back of a spatula.
  6. Roast for another 10-15 minutes, until the sausages are deeply browned and the tomatoes are saucy.
  7. Remove the dish from the oven and remove the sausages. Stir the vinegar into the tomato mixture and firmly press the tomatoes and beans with the back of a spatula to create a creamy sauce.
  8. Return the sausages to the pan and top with parsley to serve.
