Apple Skillet Blondie Recipe

Ingredients
½ cup unsalted butter, melted, plus additional for greasing the pan
1 ½ cups packed dark brown sugar
2 large eggs
1 teaspoon vanilla bean paste or extract
1 ⅔ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon apple pie spice
¾ teaspoon kosher salt
1 cup walnuts and/or butterscotch chips
2 tablespoons unsalted butter
1 Honeycrisp apple, cored and diced
2 tablespoons packed dark brown sugar
¼ teaspoon apple pie spice
¼ teaspoon kosher salt
1 tablespoon lemon juice
Directions
Preheat the oven to 375 F.
To prepare the blondies, in a bowl, stir to combine the melted butter and dark brown sugar.
Whisk in the eggs and vanilla until smooth.
Stir in the flour, baking powder, apple pie spice, and salt.
Fold in the walnuts and/or butterscotch chips, reserving ¼ cup for sprinkling over the top before serving.
Grease a 10-inch skillet.
Pour the blondie batter into the skillet and spread it evenly.
Bake for 22-24 minutes or until set on the edges but slightly underbaked in the center.
In the meantime, to prepare the apple topping, heat the butter in a saucepan to melt.
Continue to cook, stirring occasionally, until browned.
Add the apples, brown sugar, spice, and salt.
Continue to cook, stirring occasionally, until apples are caramelized and softened.
Stir in the lemon juice, then pour the apples over the warm blondies.
Sprinkle with the reserved walnuts and/or chips.
Top with scoops of ice cream, if desired, and serve warm.
