BBQ Steak Bites Recipe

Ingredients
  • 1 cup ketchup
  • 3 tablespoons bourbon or rye whiskey
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon minced onion
  • 1 teaspoon hot sauce
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt
  • 2 pounds sirloin steak, cut into 1 ½-inch cubes
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons grapeseed oil (or other neutral oil)
  • 1 teaspoon flaky sea salt
  • ⅛ cup fresh flat-leaf parsley, chopped
Directions
  1. Combine all barbecue sauce ingredients in a small saucepan over medium heat.
  2. Bring the sauce to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until slightly thickened. Remove from heat and set aside.
  3. Pat the steak cubes completely dry with paper towels. Toss with salt, pepper, smoked paprika, and garlic powder until evenly coated.
  4. Heat oil in a large cast iron skillet over high heat until smoking.
  5. Add steak bites in a single layer, working in batches if needed to avoid overcrowding. Sear for 1 to 2 minutes per side, until deeply browned on all sides.
  6. Remove the steak bites from the pan, pour half of the barbecue sauce over them, and toss to coat. Return to pan, and cook on medium heat for 1 minute until the sauce caramelizes slightly around the bites.
  7. Transfer the bites to a serving platter.
  8. Drizzle steak bites with remaining barbecue sauce, sprinkle with flaky salt and parsley, and serve with toothpicks.
