Baked Goat Cheese With Blistered Tomatoes Recipe

Ingredients
4 tablespoons olive oil, divided
3 cups whole grape or cherry tomatoes
3 cloves garlic, chopped
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes
⅓ cup pitted kalamata olives, halved
1 (8-ounce) goat cheese log, chilled
Zest from one lemon
2 tablespoons slivered fresh basil
Baguette for serving
Directions
Preheat the oven to 375 F.
Add 2 tablespoons of oil to a cast iron skillet and bring the heat to medium-high.
Add the tomatoes and cook without stirring until the skins blacken and split, about 4 minutes.
Cook for about 8 more minutes, stirring and pressing down to burst open each tomato.
Remove the skillet from the heat and stir in the remaining olive oil, garlic, oregano, salt, black pepper, and red pepper flakes to the hot pan.
Stir in the olives.
Place the goat cheese log in the center of the skillet.
Put the skillet in the oven and bake until the cheese is soft and warmed through, 12 to 15 minutes.
Sprinkle with the lemon zest and basil.
Serve with baguette slices straight from the pan or transfer to another serving dish.
