Homestyle Filipino Chicken Adobo Stir-Fry Recipe

Ingredients
  • 1 whole (3½–4-pounds) chicken
  • ¼ cup apple cider vinegar
  • ¼ cup soy sauce
  • 6 garlic cloves, smashed
  • 1 teaspoon black pepper
  • 4 bay leaves
  • ¼ cup soy sauce
  • ¼ cup apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 cup chicken broth
  • 2 tablespoons neutral oil
  • 1 large onion, sliced
  • 1 bell pepper, sliced
  • 4 cups cooked white rice, for serving
Directions
  1. Cut the chicken into pieces using scissors or a sharp, heavy chef’s knife.
  2. Combine the chicken pieces with apple cider vinegar, soy sauce, smashed garlic, black pepper, and bay leaves in a large bowl. Toss to coat. Cover and marinate in the fridge for at least 1 hour or up to overnight.
  3. Whisk together the soy sauce, apple cider vinegar, sugar, and chicken broth in a small bowl. Set aside.
  4. Heat the oil in a large heavy-bottomed skillet or wok over medium-high heat.
  5. Remove the chicken from the marinade and pat it dry. Reserve the marinade.
  6. Add the chicken pieces skin-side down and sear for 4–5 minutes per side until golden brown. Work in batches if needed.
  7. Remove the chicken and set it aside.
  8. Add the onion and bell pepper to the same pan and cook for 3–4 minutes, until softened.
  9. Pour in the adobo sauce and reserved marinade.
  10. Return the chicken to the pan. Bring to a boil, then reduce the heat to medium-low.
  11. Cover and cook for 25–30 minutes, turning the chicken occasionally, until it’s cooked through and the sauce has reduced.
  12. Remove the bay leaves. Taste and adjust the seasoning.
  13. Serve the Filipino chicken stir-fry over white rice.
