Mashed Potato Cups Recipe

Ingredients
  • 4 small russet potatoes, peeled and diced
  • ½ teaspoon salt
  • 6 ounces Mexican chorizo
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • 1 egg
  • ¼ cup sour cream
  • ½ cup shredded pepper Jack cheese
Directions
  1. Preheat the oven to 400 F and thoroughly grease a mini muffin tin.
  2. Add the peeled and diced potatoes to a large pot or saucepan and fill with water, covering the potatoes by 1 inch.
  3. Bring to a boil and cook until soft, about 15 minutes.
  4. Drain the potatoes.
  5. Add the salt and mash into a mostly smooth consistency using a potato masher.
  6. In the meantime, add the chorizo to a skillet over medium heat.
  7. Crumble and brown for about 3 minutes, then add the peppers and continue cooking until chorizo is deeply browned and peppers are soft.
  8. Add the chorizo mixture to the potatoes along with the egg, sour cream, and cheese.
  9. Mix to combine well.
  10. Scoop the potato mixture into each cup of the muffin tin, pressing down to fill.
  11. Bake for 20-25 minutes, until golden brown.
  12. Serve the mashed potato cups warm.
