Hawaiian-Style Teriyaki Beef Kabobs Recipe

Ingredients
  • 1 cup pineapple juice
  • 1 cup soy sauce
  • ½ cup brown sugar
  • 1 tablespoon ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger
  • 1 ½ pounds beef sirloin, cut into 2-inch cubes
  • 1 red onion, quartered and halved
  • 1 red bell pepper, sliced into 2-inch pieces
  • 2 cups pineapple chunks
Directions
  1. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
  2. Place the beef cubes into a bag and cover with marinade. Transfer to the refrigerator and marinate for at least 2 hours and up to 8 hours.
  3. When ready to grill, preheat the grill to medium-high heat, or about 400-450 F.
  4. Remove the beef from the marinade, reserving the marinade, and let sit at room temperature for 10 minutes.
  5. To build the skewers, thread onion, pepper, pineapple, and beef pieces onto skewers until each skewer is full.
  6. Place the skewers over direct heat and grill 8-12 minutes, rotating halfway through.
  7. While the kabobs are cooking, transfer the reserved marinade to a saucepan and bring to a simmer over medium heat.
  8. Simmer rapidly for 5-10 minutes, until sauce is reduced and slightly thickened.
  9. Brush the teriyaki sauce over the grilled kabobs to serve.
