Homemade Funfetti Cookies Recipe

Ingredients
  • 2 ¼ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup powdered sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon clear imitation vanilla extract
  • ½ teaspoon almond extract
  • ½ cup rainbow jimmies, divided
Directions
  1. Preheat the oven to 375 F.
  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
  4. In a large bowl, beat the butter, granulated sugar, and powdered sugar with a hand mixer until light and fluffy, about 2 to 3 minutes.
  5. Add the egg, egg yolk, vanilla extract, and almond extract and mix until combined.
  6. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  7. Fold in ¼ cup of the jimmies.
  8. Scoop the dough into 2-tablespoon portions and roll them into balls.
  9. Place the balls on the prepared baking sheets about 2 inches apart.
  10. Press a few of the remaining jimmies onto the tops of each dough ball.
  11. Bake for 10 to 11 minutes until the edges are just set and the centers look slightly underdone.
  12. Let the cookies cool on the baking sheet for 5 minutes.
  13. Transfer the cookies to a wire rack to cool for 5 more minutes before serving.
