Baked Churro Cake Donuts Recipe

Ingredients
  • 2 cups and 5 tablespoons all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon fine sea salt
  • ½ cup granulated sugar
  • 2 large eggs
  • ¾ cup plain whole-milk yogurt
  • ¼ cup whole milk
  • ⅓ cup neutral oil (avocado or sunflower)
  • 1½ teaspoons pure vanilla extract
  • ½ cup granulated sugar
  • 1½ teaspoons ground cinnamon
  • 3 tablespoons unsalted butter, melted
  • 6 ounces dark chocolate (60–70%), finely chopped
  • 3 tablespoons heavy cream
Directions
  1. Preheat oven to 375 F.
  2. Grease two standard 6-well donut pans thoroughly, including the center posts.
  3. Fit a large piping bag with a large open-star tip.
  4. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and sugar in a large bowl. Make a well in the center.
  5. In a separate bowl, whisk the eggs, yogurt, milk, oil, and vanilla until smooth and fully combined.
  6. Pour the wet ingredients into the dry ingredients. Fold with a spatula until just combined. Do not overmix.
  7. Transfer the batter to the piping bag.
  8. Pipe in a continuous circle to fill each well about half full. Do not smooth the batter after piping.
  9. Bake for 12 minutes, until the tops spring back when lightly pressed and a toothpick comes out clean. Do not overbake.
  10. Cool in the pan for 5 minutes, then invert onto a wire rack. Cool for 5 more minutes.
  11. For the cinnamon sugar coating, stir together the sugar and cinnamon in a shallow bowl.
  12. Brush each donut lightly with melted butter, then toss them in the sugar mix to coat the top.
  13. For the chocolate dipping sauce, combine the chocolate and cream in a heatproof bowl. Microwave in 20-second bursts, stirring between each, until fully melted and glossy.
  14. Dip the top half of each donut in the chocolate and set them aside to dry. Sprinkle with flaky salt, if desired. Let the donuts sit for 10 minutes before serving.​​​​​​​​​​​​​​​​
  15. Serve the churro donuts with more dipping sauce on the side.
