Marinated Tomato Salad With Arugula And Parmesan Recipe

Ingredients
  • 4 cups grape tomatoes, halved
  • 1 clove garlic, crushed
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon pink Himalayan salt
  • ¼ teaspoon pepper
  • 1 tablespoon chopped chives
  • 6 cups arugula
  • ¼ cup shaved Parmesan
  • ¼ cup toasted pine nuts
Directions
  1. Add the halved tomatoes to a colander and drain in the sink for 15 minutes.
  2. In a small bowl, combine the crushed garlic, olive oil, red wine vinegar, salt, and pepper.
  3. Add the drained tomatoes and chives to a bowl with a lid. Pour over the dressing and stir.
  4. Cover and refrigerate for a minimum of 2 hours.
  5. When ready to assemble the salad, add the arugula to a large bowl.
  6. Toss with the marinated tomatoes and chives.
  7. Add the Parmesan and toss again.
  8. Top the salad with pine nuts and serve right away.
