Ingredients
1.5 pounds carrots, peeled and sliced lengthwise
2 tablespoons olive oil
½ teaspoon dried thyme
½ teaspoon sea salt
½ teaspoon black pepper
2 tablespoons butter, diced
½ cup vegetable stock
½ teaspoon granulated garlic
1 tablespoon maple syrup
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 tablespoon fresh dill, roughly chopped
1 tablespoon fresh parsley, roughly chopped
Directions
Preheat the oven to 400 F.
Place the carrots into a roasting tin along with the olive oil, thyme, and salt and pepper.
Toss the ingredients together so the carrots are well-coated.
Dot the butter around the carrots.
Roast the carrots for 30 - 40 minutes until they are tender and beginning to brown.
Whisk together the vegetable stock, garlic, maple syrup, lemon juice, and Dijon mustard and drizzle the sauce over the carrots.
Place the roasting tin back into the oven for another 8 to 10 minutes.
Sprinkle the carrots with fresh dill and parsley before serving.
