Ribeye Steak Sandwich With Caramelized Onions Recipe

Ingredients
  • ½ cup mayonnaise
  • 2 teaspoons prepared horseradish
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt, to taste
  • 3 tablespoons butter
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 2 pounds ribeye steak
  • Salt, to taste
  • Black pepper, to taste
  • 4 ciabatta rolls, split
  • 8 ounces Gruyère cheese, sliced
  • 2 cups arugula
Directions
  1. Make the aioli by whisking together mayonnaise, horseradish, garlic, lemon juice, and salt. Refrigerate until needed.
  2. Melt butter in a large skillet set over medium heat.
  3. Add onions and sugar.
  4. Cook the onions, stirring occasionally, until deep golden brown, about 30 minutes. Set aside.
  5. Season the steak generously with salt and pepper on both sides.
  6. Heat an oiled cast iron skillet over high heat until smoking.
  7. Sear steak 4-5 minutes per side for medium-rare.
  8. Remove the steak and rest for 10 minutes.
  9. Toast the ciabatta rolls cut-side down in the steak drippings until golden, 2-3 minutes.
  10. Slice steak thinly against the grain.
  11. Spread aioli on both of the rolls.
  12. Divide steak among the bottom halves of the rolls.
  13. Top with caramelized onions and Gruyère slices.
  14. Set the broiler to low.
  15. Transfer the sandwich bottoms to a parchment paper-lined baking sheet. Place them under the broiler for 2-3 minutes, until the cheese melts.
  16. Top the sandwiches with arugula.
  17. Cap the steak sandwiches and serve immediately.
