Ingredients
  • 16 ounces (1 pound) gnocchi, divided
  • 2 tablespoons olive oil, plus more for garnishing
  • 1 cup arrabbiata sauce
  • 6 cups water
  • 4 cups baby spinach
  • ½ teaspoon salt, or to taste
  • ½ teaspoon pepper, or to taste
Directions
  1. Chop ¼ cup of gnocchi into small pieces.
  2. Heat 2 tablespoons of olive oil in a pot over medium heat.
  3. Add the chopped gnocchi to the oil and saute until browned, stirring constantly to avoid sticking, about 3-4 minutes.
  4. Remove the gnocchi and set it aside.
  5. Add the pasta sauce to the pot with the water. Bring to a simmer.
  6. Add the rest of the gnocchi and cook until it's floating and tender, about 3 minutes.
  7. Add the spinach, salt, and pepper and stir to wilt.
  8. To serve, garnish with crispy gnocchi pieces and a drizzle of olive oil.
