Instant Pot Penne Pasta And Creamy Tomato Sauce Recipe

Ingredients
  • 2 tablespoons olive oil
  • 1 ½ pounds skinless boneless chicken thighs, cut into 1-inch pieces
  • Salt and black pepper
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 pound penne pasta
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups chicken stock
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • ¼ cup fresh basil, chopped
Directions
  1. Set an Instant Pot to saute mode and heat the olive oil.
  2. Season the chicken with salt and pepper.
  3. Brown the chicken in batches for 2-3 minutes per side.
  4. Remove the chicken and set it aside.
  5. Add the onion to the pot and cook until softened, 3-4 minutes.
  6. Add the garlic, red pepper flakes, oregano, and dried basil. Cook for 1 minute, until fragrant.
  7. Add the penne, crushed tomatoes, and chicken stock. Stir to combine, ensuring the pasta is mostly submerged. Do not stir again.
  8. Place the chicken pieces on top of the pasta. Cancel saute mode.
  9. Secure the lid with the valve in sealing position and pressure cook on high for 5 minutes.
  10. Quick release the pressure. Remove the lid and stir the pasta to incorporate any liquid.
  11. Switch to saute mode. Stir in the heavy cream and Parmesan cheese, and simmer 2-3 minutes, until the sauce thickens slightly.
  12. Season with salt and pepper to taste, garnish with fresh basil, and serve immediately.
