Cajun Baked Steak Fries Recipe

Ingredients
  • 2 pounds russet potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1 tablespoon cornstarch
  • ½ cup mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 tsp smoked paprika
  • ¼ tsp salt
  • Pinch cayenne pepper
Directions
  1. Boil whole potatoes in salted water 12-15 minutes until just fork-tender (not fully cooked).
  2. Drain thoroughly and cool the potatoes for 10 minutes.
  3. Preheat the oven to 450 F.
  4. Place a rimmed baking sheet in the oven to heat.
  5. Cut the potatoes into thick wedges.
  6. Pat the potatoes completely dry with paper towels.
  7. Toss the wedges with cornstarch, then olive oil, Cajun seasoning, and salt.
  8. Arrange the fries on a hot baking sheet in a single layer, cut-side down.
  9. Bake the fries for 20 minutes, flip, then bake for 15-20 minutes more until deep golden and crispy.
  10. To make the aioli, whisk mayonnaise, garlic, lemon juice, smoked paprika, salt, and cayenne together until smooth.
  11. Serve the fries immediately with the aioli.
