These Chimichurri Steak Bites Are Savory And Herbaceous

Ingredients
⅓ cup olive oil
⅓ cup fresh parsley
1 tablespoon red wine vinegar
2 cloves garlic, crushed
½ teaspoon dried oregano
¼ teaspoon chile flakes
½ teaspoon sea salt
½ teaspoon black pepper
2 thick cut sirloin or ribeye steaks, roughly 1.5 pounds total
1 tablespoon olive oil
Salt and pepper, to taste
Directions
To make the chimichurri, add the olive oil, fresh parsley, red wine vinegar, garlic, dried oregano, chile flakes, salt and pepper to a blender.
Blend for 10 to 15 seconds.
Set the chimichurri aside.
Prepare the steak by patting it dry and dicing it into roughly 1-inch cubes.
Toss the steak bites with the olive oil and season well with salt and pepper.
Heat a large pan to a medium-high heat.
Add the diced steak to the pan in an even layer, giving each piece plenty of space. This may need to be done in batches.
Sear the steak bites for 1 to 2 minutes each side, depending on your preferred doneness.
Remove the steak from the pan and allow it to rest for a few minutes on a plate.
Drizzle the steak bites with the chimichurri and serve.
