Ingredients
  • 8 tablespoons softened butter
  • 6 flat anchovies, packed in oil
  • 2 tablespoons finely chopped parsley
Directions
  1. Melt 2 tablespoons butter in a small nonstick skillet over medium-low heat.
  2. Add the anchovies, stirring constantly until anchovies begin to melt. Press into the anchovies with a spatula to dissolve, if necessary.
  3. Remove the skillet from heat and let the mixture cool slightly, about 5 minutes.
  4. Combine the cooked anchovy paste into the remaining butter along with the parsley.
  5. Serve the anchovy butter or store in an airtight container until ready to use.
