Ingredients
  • 1 ½ pounds carrots, washed
  • 1 ½ tablespoons olive oil
  • 2 tablespoons maple syrup
  • Salt and pepper, to taste
  • ⅓ cup pecans, chopped
Directions
  1. Preheat the oven to 375 F.
  2. Prepare the carrots by slicing them in half.
  3. Place the carrots into a baking tray.
  4. Drizzle the carrots with the olive oil and maple syrup, and season well with salt and pepper.
  5. Toss everything in the tray to thoroughly coat the carrots.
  6. Roast the carrots for 25 minutes.
  7. Roughly chop the pecans.
  8. Remove the baking tray from the oven and sprinkle the chopped pecans over the carrots.
  9. Return the carrots to the oven to roast for 10 more minutes.
  10. Remove from the oven and serve.
