French-Style Chicken Chasseur Recipe

Ingredients
3 tablespoons all-purpose flour
½ teaspoon sea salt
½ teaspoon black pepper
1 ½ pounds chicken pieces, bone-in and skin on
1 tablespoon olive oil
2 tablespoons butter
¼ cup shallots, sliced
2 garlic cloves, crushed
½ cup diced carrot
2 cups button mushrooms, sliced
½ cup white wine
2 cups chicken stock
½ cup diced tomatoes
4 stalks fresh thyme
1 tablespoon fresh tarragon, finely chopped
Directions
Combine the all-purpose flour, salt, and pepper in a bowl.
Toss the chicken pieces in the seasoned flour to coat.
Heat a large, heavy-bottomed pan with the olive oil and butter to a medium-high heat.
Add the floured chicken pieces to the pan.
Fry for 7 to 8 minutes, turning regularly, until the chicken is golden.
Remove the chicken from the pan.
Add the shallots, garlic, carrots, and mushrooms to the pan.
Saute for 5 to 6 minutes.
Add the white wine, chicken stock, diced tomatoes, thyme, and tarragon.
Return the chicken to the pan.
Simmer for 35 to 40 minutes until the chicken is cooked through.
Serve the chicken chasseur.
